BAKED APPLE PANCAKE

Byron, IL(Zone 4a)

Since apples are comming into season I thought I would share this with my garden friends. You will swear you are at a bed & breakfast when you eat this......

1c. Buckwheat pancake mix
2/3c. milk
2 Tlb. veg. oil
1/4c. butter
1 egg (beaten)
1/3c. packed brown sugar
1 med. Golden Delicious Apple or any variety peeled & sliced.
Maple Syrup

In a bowl combine mix,oil, milk & egg. In a 8" ovenproof skillet melt butter. Stir in br. sugar & apples. Saute untill sugar is disolved. Pour batter over & cook uncovered over med heat untill bubbles form on top. Transfer to heated 350 degree oven and bake uncovered for 12-17 min untill golden brown. Mine is 16 min in a calphalon pan. Invert onto a serving plater, & serve with syrup. ENJOY.......
