Here are a few suggestions for herbed vinegars.
1. Heat the vinegar but don't boil it.
2. Pour the vinegar into a glass jar that you've already added fresh herb leaves to. Use three 2-inch springs for each cup of vinegar.
3. Let the vinegar cool, then cover it and store in a cool, dark place. (Can be stored for up to 12 months.)
Some herb combinations for Rice Wine Vinegars:
1. garlic and leaf coriander
2. rose petals and violet petals
Some herb combinations for White Wine Vinegars:
1. garlic, parsley and fennel leaf
2. borage, dill and shallots
3. rosemary, raisins, orange peel and garlic
Combination for a Red Wine Vinegar:
1. Parsley, shallots and sage
Combinations for Cider Vinegars:
1. Dill, nasturtiums and garlic
2. chive blossoms and savory
3. garlic, oregano and chiles
