This is a recipe my Grandmother always made. I don't have amounts because it depends on how much you want to make.
In a large pot saute onions & garlic in olive oil. When cooked, add cut up chicken. I just use a cut up chicken. Let the chicken brown a little. Add water to cover - remember to measure the water. Add salt & pepper and a pinch of saffron. Simmer. When the chicken is done add rice for the amount of water you added. Cook according to the rice directions. I always use Uncle Ben's. This is even better as left-overs sauted in olive oil.
I like to squeeze fresh lemon on this. I think it comes from putting lemon on paella. I don't know what you can put in if you don't have saffron. It's a really easy dish. It's probably easier if you decide how much rice you want to use and use the amount of water on the rice package for that amount.
