I remember (but not remember where from) hearing that in India they make a mix of onion and what else and they stuff the sardines' belly with it so it will marinade for several hours. Then they cook it as is, with the onions etc inside, so they say it is delicious...

If you can elaborate in the details, and in preparing fish it is the details that count, please do so, at all people's benefit, including myself, even if my cardiologist never stops complaining that I need to lose weight....
