Shield's Peach Cobbler

Harford County, MD(Zone 6b)

This is a recipe that John Shields,who has a restaurant called Gertrudes in Baltimore,had in the paper this week.He also has a cooking show on PBS TV and a wonderful cookbook about Chesapeake Bay Cooking...Anyway,I made this for dinner and it was delicious.
Mix together,3 cups sliced peaches,3 tablespoons sugar,1 1/2 tablespoons flour.Pour into a buttered 8" square baking dish.
Topping ingredients are:
1 1/4 cups flour
1 cup sugar
2 teaspoons baking powder
pinch of salt
1 egg
3/4 cup milk
4 tablespoons butter,melted
Just add the liquids to the dry ingredients and stir till smooth.Pour over the peaches and bake at 375 for 40-45 min.
