Grandma Wolf's Cold Cherry Soup

Carlisle, PA(Zone 6b)

I can't remember if I submitted this one or not but here it is, hits the spot on a hot summer day

2 lbs sour cherries (cooked & pitted),(may be fresh, canned or frozen, if frozen, do not thaw)(I bought 3 lbs of bing cherries & pitted them & ended up with 2 lbs of cherries)
2 cups of sugar (if using sweet cherries, use 1 cup sugar)
1 small package of red cherry jello
water
3 egg yolks
wine or lemon juice to taste (I used Manischewitz cherry wine)
3 egg whites

Combine cherries, sugar & egg yolks in pot with sufficient water (2 1/2 quarts) to cover. Bring to a boil. Simmer. Beat egg whites until peaked but not stiff. Add wine or lemon jice to soup. Remove from heat. Add egg whites to soup. Blend into soup, stirring slowly. Chill well before serving. (other fruits, such as Peaches & berries, may be added to finished recipe)
