6 cups water
2 tsp salt
1 1/4 cups elbow macaroni
1 recipe cheese sauce
2 tbsp grated parmesan cheese

Bring water to boiling point, add salt and macaroni, cook 15 minutes. Drain in colander. Place in casserole and mix with cheese sauce. Sprinkle with Parmesan cheese and paprika on top. Bake in pre-heated oven at 350 degrees for 35 minutes. Serve hot with the old vavorite, tomato sauce or stewed tomatoes.
Cheese Sauce
2 TBSP butter
2 TBSP flour
1/4 tsp salt
2 1/2 cup milk
4 oz velveeta cheese
1/8 tsp paprika
2 egg yolks, beaten
1/4 cup cream
4 oz grated cheddar cheese
Melt butter in saucepan, add flour. Stir until smooth. Add milk gradually, stir until thick. Add grated cheese and velveeta, cut in small chunks. Simmer a few minutes until cheese melts & add paprika. Beat egg yolks, add cream and 1/2 cup cooked sauce to egg yolks and cream. Stir well and add to remaining sauce. Blend. Can be used for macaroni and cheese casserold or served over hot vegetables such as broccoli, asparagus, cauliflower or baked potatoes.
