Here is a wonderful recipe from my home continent, Africa.

Bobotie

Traditionally this South African casserole is made with lamb. It is also delicious when beef is substituted.

2 pounds Lamb, ground
1 large Onion, chopped
2 cloves Garlic, minced
2 Tablespoons Butter
2 Tablespoons Curry powder
2 ounces Almonds, slivered
1/2 cup Apricots, dried, chopped
1/4 cup Chutney
3 slices Bread, white
1 1/2 cup Milk
3 Eggs

Melt the butter in a large heavy skillet. Add the onion and garlic. Cook until just soft. Add the lamb and brown. Add to a large mixing bowl. Toss in the curry, almonds, apricots, and chutney. Mix well. Soak the bread in the milk (reserve the milk). Blend into the mixture. Add 1 egg to the mixture and blend well. Place the mixture in a large, lightly oiled casserole dish. Beat the remaining 2 eggs with the reserved milk. Pour over the mixture. Bake at 350 until the casserole is set and lightly browned (about 45-60 minutes). Serve warm. Serves 6-8
