anyone have a Thai peanut dipping sauce recipe?

I love the thai peanut sauce that you get in thailand, but I have tried in vain to find one that has the same taste here. I keep buying bottled thai peanut sauces, but they never taste the same, my fridge door has about half a dozen bottles that I tried and didnt really like very much.
I also love ginger, anyone know a good recipe for pickled ginger?
