Anyone have a good recipe for Ham Hocks?

Ladysmith, BC(Zone 8a)

We bought a whole slaughtered pig from a local farmer, was packaged up into bits & pieces, then frozen. Included are 4 ham hocks (trotters my mother would have called them).

Anyone have a good recipe for these things? Do I cook them for a long time like a stew? They have a tough outer skin which I assume I have to remove after cooking? We are fond of spicy food so a spicy recipe would be appreciated.
