Summer salad recipes

Here's a couple of our favorite summer salad recipes:

Macaroni Salad

1/2 # elbow macaroni, cooked and cooled
1/2 to 3/4 cup mayonnaise
1 large bell pepper, diced
1 can red kidney beans, drained
1 small red onion, diced

Mix all ingredients and either serve immediately or refrigerate. Will keep for several days, if covered and refrigerated. (I think it’s better at room temperature).

Tomato, Broccoli, Cucumber & Onion Salad

I really don't have measurements on this - so you will have to find out what you like the best and add more of it! :-) I usually approximately 1 & 1/2 cups of broccoli, 1-2 large tomatoes, 1/2 cup of cucumber and a small red onion (like the size of a plum).

Broccoli (small bite sized pieces)
Ripe red tomato (cubed)
Cucumber (diced)
Red onion rings (or vidalia if you prefer milder onions)

Mix with 2 T of mayonnaise to 1 T of sour cream and add 1/2 tsp dried dill. Nix well into veggies.

If you have more veggies than would be completely covered by the dressing, add more dressing as all veggies should have a good coating. This is best refrigerated for an hour or so before serving.
