OK, so I'm putting in a waterfalls that is 30 feet long from one pond to the other down a 40 degree slope, how deep do I need the trench to be to carry the water down???
It's about 3' wide in spots.

I couldn't tell you in inches how deep to put it but you have to consider in rock or gravel that you want the water to run over. If you have any turns, even slight, in the course of the falls and it's not deep enough it could overrun instead of making the turn.
