Smothered Corn

Brewers, KY(Zone 6b)

10-12 ears fresh summer sweet corn
4 Tablespoons bacon drippings or cooking oil
3/4 cup chopped onion
1/4 cup chopped bell pepper
1 rib chopped celery
1 small potato, cut in small cubes
1-16oz can stewed tomatoes(rotel, if you want a kick but don't add the red pepper if you use rotel)
1/2 teaspoon salt
1/8 teaspoon red pepper
garlic powder to taste

**Clean and cut corn from the cob, try to get all the 'milk' you can from the cobs when cutting, set corn aside. In a heavy pot, heat oil, add onions, bell pepper,celery, potaote and saute' until clear. Add corn & stewed tomatoes. Cover and simmer 20-25 minutes. Add salt & pepper and cook 5-10 more minutes or until corn is tender.
I like to add a can of small Lima beans to this dish. My mom made this dish, her mom made this dish...etc...When fresh corn comes in this is one of my favorite dishes. Lisa
