Haitian Sweet Potato Bread

Brewers, KY(Zone 6b)

5 tablespoons butter, softened
2 lbs sweet potatoes, boiled or 2-16oz cans sweet potatoes, drained
1 large ripe banana
1 cup sugar
3 eggs, lightly beaten
1/2 cup dark corn syrup
1/2 cup milk
1/2 cup evaporated milk
1/3 teaspoon vanilla extract
1/4 teaspoon nutmeg, ground
1/4 teaspoon cinnamon, ground
1/4 cup seedless raisins
***Peel potatoes while warm. Mash potatoes and banana in a large bowl. Add the 4 tablespoons butter, egg and mix well. Add remaining ingredients and beat until batter is well blended. Preheat oven to 350. Brush bottom & sides of 9x5x3 inch loaf pan with remaining butter. Pour batter in prepared pan. Bake for 1&1/2 hours. Cool about 5 minutes before turning out on wire rack.
Sweet potato bread has a texture similar to pudding and is traditionally served as a dessert topped with whipped cream. YUMMY!
