Poppysue, can I ask a special favor? Can you post a picture of the tubers? LOL I have several types of perennial sunflowers growing and many were from seed. I dug up one of them and moved them and the roots looked like big gnarly finger things, for lack of a better description. :)

Put a couple pics in for you badseed. I think these are the ordinary wild type. There are some cultivars that are grown especially for harvesting the tubers - they'd be fatter. These ones range in size from an inch to 6 or 8 inches long. They have a pine-ish smell to me.

Yes - you can eat them. It's sorta of like a potato but has a different flavor. They say to harvest them in the fall after frost. Like I said tho - I wouldn't plant them in the garden. Even if you dig them out in the fall any little pieces of root left in the ground will make new plants. beofre you know it you'll have them coming out of your ears - like me ;)
