collecting sap from birch

is there any outthere interesting of how to collect birchsap
its quite easy you make a big V in the tree with a sharp knife (careful with your fingers)then you hammer in a small pipe in the bottom of the V and under the pipe you put a big bottle (5-10 liters)you have to empty it every day.You can drink it as it is,bake on it and I have even heard that some make wine from it the rest that you cant use at once you can freeze,it tastes a little sweet and are good for your kidneys drink only one glass a day.
