What is your favorite Easter dinner menu/recipe?

I'm searching for a new menu for Easter. The same ol', same ol' is getting pretty worn out. I want to know what your family favorites are, with recipes if possible. Here's what we usually have, and we are all bored with it.

ham
baked potatoes
macaroni salad
cole slaw
corn
a plain jello salad with fruit cocktail in it
relishes
buns
pies (usually pumpkin, rhubarb and apple)

I'd especially love some new salad recipes that have been tried and liked by your family. I'm really lacking in that department.
