Hey, I got the date right today, LOL!!

My MIL called me Saturday afternoon with a yummy recipe for baked chicken. She said to coat the chicken breasts with French's honey mustard and then dredge them in about 2 teaspoons of French's canned onion rings (first crushed in a bag). Bake at 350-degrees for about 30 minutes or until done.

I didn't have any of the onion ring thingies, so I substituted seasoned breadcrumbs (110 calories, 1.5g fat per 1/3 cup - and it didn't even use the whole measure). I didn't have honey mustard, so I mixed honey in with Plochmann's yellow mustard (120 cal, 0g fat). The chicken breasts were 170 cal, 3.5g fat each. I sprayed them lightly with Pam cooking spray and sprinkled on a little Cajun seasoning before putting them in the oven. They were really tasty! I bet there are lots of yummy variations one could do with this recipe, too.

Grand total: Each serving has 280 cal, 5g fat.
