2-3 cups chopped onions(whatever kind you have on hand)
1 cup shredded Ramano cheese
1 cup shredded Cheddar cheese
3-4 cups cooked Brown Rice
3-4 eggs
1 cup milk
1/2 cup flour(to soak up the juice from the onions)
1-2 cups finely chopped ham
Mix everything together and pour into a large greased casserole. Bake at 350* until set in the middle.
NOTE-you can use whatever kinds of cheeses you like or have on hand. This recipe was developed to make use of the onions we have such an abundance of right now.
