Azalea's Beets/Eggs :)

Thanks to Azalea who sent me her recipe for making beet eggs using canned beets. I thought some of you might like to see it, too.

1. Open can of beets - pour the juice in sauce pan

2. Add a couple of Tbsp. each of vinegar & sugar, add beets, heat and serve.

My Mom used to add a dash of cloves and butter. If you want
Harvard beets, add a couple Tbsp. of cornstarch to cold juice before adding the beets. Then bring to a boil and serve.

For the eggs - pour heated juice, 1/2c vinegar and 1/4c sugar in a jar with enough water to cover the eggs but not so much as to weaken the taste too much. Add boiled and peeled eggs, stir ocassionally to avoid white "pressure spots" on them. Let stand overnight.
