I have had a bread machine for about 5 years, used to make bread all the time, only thing was, my husband hated the hole in the bottom of the bread.
Haven't made bread for a year or so, but I find the store bought bread so awful, am back to making my own bread.
Only this time I let the machine do it's thing to 'dough' and then I put it in a bread pan and bake it in the oven. NO hole in the bottom of the bread!
Anyone have any good recipes? Here is one I like
Oatmeal Molasses Bread
1 1/2-POUND LOAF
1 cup plus 2 tablespoons water (I save the water from boiling potatoes for dinner, don't keep the water for more than 2 days as it will start to ferment!)
2 tablespoons molasses
1 tablespoon oil (I use grape oil - not olive oil or vegetable oil)
1 teaspoon butter or margarine
1 teaspoon salt (omit if you salted the water for the potatoes)
2 cups whole wheat flour
1 cup bread flour
1/3 cup rolled oats, toasted (see How to Toast Oats tip below)
3 tablespoons nonfat dry milk powder
2 teaspoons Bread Machine Yeast
Add ingredients to bread machine pan in the order suggested by manufacturer, adding molasses with water and oats with flours. Recommended cycle: Basic/white bread cycle; medium/normal color setting. (I only take it to the 'Dough' cycle, then put it in a bread tin, and let it sit in a warmed oven for 30 minutes. Then bake in 350 oven for 35 - 40 minutes)
Toasted oats impart a wonderful nutty flavor to this wholesome bread. To toast the oats, spread a thin layer in a shallow baking pan. Bake at 350o for 10 to 15 minutes or until light golden brown, stiring often. If you want to toast enough oats for more than one loaf, just freeze the extra oats.
