Grapefruit & Avocado Salad

This doesn't sound particularly great, but I promise you the salad dressing is what makes it a delightfully light and tasty treat. It has been a hit at several dinner parties lately. I do know it needs a generous amount of dressing per salad.

Grapefruit & Avocado Salad
Serves 4

1 large or 2 small avocados
1 large red (or pink) grapefruit
Romaine or Bibb lettuce
Grapefruit French dressing (see recipe below)

Peel grapefruit, cutting through skin and pith down to flesh. Slide a small knife between the membranes and grapefruit sections, removing sections intact. Do this over a small bowl to catch the juice for use in the dressing. Place a bed of lettuce leaves on individual salad plates. Arrange alternate slices of avocado and grapefruit sections in a circle. Place 2 to 3 Tbs. cottage cheese in center, if desired.

GRAPEFRUIT FRENCH DRESSING
2/3 cup salad oil (I use cold pressed extra virgin olive oil)
1/4 cup white wine vinegar
1/4 cup red grapefruit juice
1 tsp. sugar
Salt to taste
1 tsp. paprika
1 tsp. tarragon

Combine all ingredients in a small bowl; whisk until well blended. Set aside for 30 minutes to allow flavors to blend. Shake well before serving.
