Zesty Cheddar Casserole
2 1 1/2 ounces each packages 4
cheese pasta sauce mix
2 cups milk
1 cup finely chopped celery
1/2 cup finely chopped onion
3-4 tablespoons Frank's RedHot Sauce
1 16 ounce bag frozen vegetable
combination such as broccoli corn
and red bell pepper
3 cups cooked diced chicken
6 slices crisply cooked bacon crumbled
1 1/2 cups shredded cheddar cheese divided
1 7 1/2 ounce package refrigerated
buttermilk biscuits
Preheat oven to 375 degrees. Prepare sauce mix according to
package directions using milk, 1 cup water and omitting
butter in 3 quart saucepan. Add celery, onion and RedHot
Sauce. Cook and stir 1 minute. Stir in the vegetable
combination, chicken, bacon and 1 cup cheese. Spoon into
greased 3 quart casserole; cover. Bake 30 minutes; stir.
Cut biscuits in half crosswise; arrange around edge of
casserole. Sprinkle remaining 1/2 cup cheese over biscuits.
Bake, uncovered, 15 minutes or u ntil biscuits are golden
brown. Makes 8 servings.
