Zucchini Fruit Cake

ZUCCHINI FRUIT CAKE

3 eggs
2 C. sugar
1 C. applesauce
1/4 C. canola oil
2 tsp. vanilla
3 C. flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. nutmeg
1 tsp. salt
2 tsp. cinnamon
2 C. shredded zucchini
1 C. diced, candied or canned pineapple
3/4 C. chopped nuts
1 small jar maraschino cherries, cut up
1 small jar green maraschino cherries, cut up
8 oz. dates, cut up
1 C. white raisins, optional

Beat eggs. Add sugar and beat well. Add applesauce, oil and vanilla. Mix flour, soda, salt, baking powder and spices together. Add to egg mixture. Mix well. Stir in fruits, nuts and zucchini. Pour into three oiled, 8x4x-inch pans. Bake 45-60 minutes at 350 degrees.
