Chicken and Angel Hair Pasta

New Iberia, LA(Zone 9a)

3 boneless skinless chicken breasts
2 tablespoons olive oil
2 tablespoons butter or margarine
2 table spoons flour
1/2 (16-ounce) can italian-style tomatoes
1 cup chicken broth
1/4 white wine
1 zucchini, juulienned
3 green onions, sliced
3 table spoons chopped fresh parsley
1/4 teaspoon basil
1/4 teaspoon oregano
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon pepper
Hot cooked angel hair pasta

Cut the chicken into bite-size pieces. brown the chicken in the olive oil and butter in a skillet. Remove the chicken to a plate. Stir the flour into the pan drippings. Drain the tomatoes, reserving the juice. stir the reserved tomato juice, chicken broth and wine into the skillet.

Simmer until thickened, stirring constantly. Add the zucchini, green onions, parsley, basil, oregano, garlic powder, salt, pepper and chicken to the skillet. Simmer for 5 to 10 minutes or until heated through. Serve over the hot cooked pasta.

Yield: 2 or 3 servings
