Buttermilk Fried Chicken

New Iberia, LA(Zone 9a)

1 1/2 cups vegetable oil
1 (2 1/2-to 3 pound) chicken, cut into pieces
1/8 teaspoon pepper
1 cup of flour
1 cup buttermilk

Heat the oil in to large deep skillet, Season the chicken with the salt and pepper. Combine the flour and buttermilk in a bowl and mix well. Coat the chicken with the flour mixture and place in the hot skillet.

Cook, covered, over medium heat for about 30 minutes or until the chicken is brown, turing the chicken occasionally. Drain on paper towels before serving.

Yield: 8 serving
