Florida Shrimp Salad

New Iberia, LA(Zone 9a)

1/3 cup sugar
1 teaspoon dry mustard
1 teaspoon salt
1 small onion, chopped
1 cup vegatable oil
1/3 cup white vingar
1 tablespoon celery seeds
1 pound peeled cooked shrimp
2 or 3 grapefruit, sectioned
4 or 5 oranges, sectioned
2 avacados, sliced
1 spanish onion, sliced
Chopped lettuce(optional)
Chopped celery(optional)

Combine the sugar, dry mustard, salt and chopped onion in a blender container. Process until blended. Add the oil and vinegar in fine stream,processing at high speed until completely blended. Stir in the celery seeds.

Place the shrimp, grapefruit sections, orange sections,avacados, sliced Spanish inion, lettuce and celery in a salad bowl. pour the dressing over the top, tossing to coat.
Yield:6 to 8 servings
