4 to 6 cooked boneless skinless chicken breasts
1 cup seedless green grapes
1/2 cup salted cashews
1/2 cup of golden raisins
2 tablespoons mayonnaise
Chopped the chicken into bite-size pieces. Cut the grapes into halves. Combine the chicken, grapes, cashews and raisins in a bowl. Add the mayonnaise and mix well. You may add more mayonnaise for desired consistency. Serve on a bed of lettuce or as a spread for sandwiches.
Yeild: 4 to 6 servings
