leftover crock pot beef

What is a new idea for leftover crock pot beef? It was cooked with carrots and celery and onions and is very tender but it was a HUGE roast and hubby ate Teriyaki Chicken Wings for a late lunch at work so now I have too many leftovers.

Help! What can I do with this meat? I'd like to have a meal to freeze for future needs since he's leaving on a conference trip Thursday! Yikes!
