So I didn't pick my shallots often enough & now they are all bunched together. Can I just separate them & replant?

I'm not sure you can replant shallots. You might be able to thin them and use the ones you pull out.
Cant grow celery, but Shallots form a bulb. The bulb can be replanted after drying. Dont know the success rate
