To ripen a green pumpkin?

I am taking part in a local CSA--Community Supported Agriculture this time around. I think they're having a tough time!

Last week, they gave me a not-ripe pumpkin, the Calabash kind. I've left it out in the sun, hoping it'll get riper. I might cut it open this weekend. Has anyone harvested an unripe pumpkin, and was it OK?

Their zuchinni and crookneck squashes are the opposite, too old! Owell.

Depends somewhat on the degree of maturity, but I am confused by the term Calabash. This normally refers to a gourd (Lagenaria siceraria ) which is used in the immature state like a summer squash. Are you referring to a Cushaw (C. mixta)? Most of these have little color change as they ripen.

OK, another name. Cushaw is a Southern USA name. The pumpkin eventually turned orange, the correct color, and tasted OK.

I'm sad to be disappointed in my local CSA. They don't know enough about gardening, I guess.
