Cold Crops

When is the best time to start cold crop seeds in the south (Georgia)? My summer garden did not do well so I have started pulling the plants to get ready for the cold crops. I want to plant cabbage, collards, kale, broccoli and any other cold crop that I can think of.

I think you mean cole crops. From seed cabbage, cauliflower, collards, broccoli need to be started in July and transplanted in September early October. Kale, mustard, turnips, rutabaga, radishes,pak choi are direct planted after Labor Day up until about the 10th of October. Time line is for Augusta Ga. but should not be too much different for you.

I thought it would be cold crops because they are grown in colder temps. Does anyone know why they are called Cole Crops.

"Cole" is just a shorthand term that refers to members of Cruciferae aka Brassicaceae aka "cruciferous," like broccoli and cabbage and the others you mentioned.

There are other cool season crops, like radishes, spinach and lettuce, which are not Cruciferae.
