I have a storage question!! We grew three varieties of potatoes - Red Pontiac, Adirondack purple and Kennebec. We are now harvesting them (a little early due to the extremely hot weather). I was shocked to learn that potatoes need to be stored around 40 degrees and have no area that cold. I'd love to know the experience of others on potato storage at 70-75 degrees. Do we need to sell them instead?? We've canned our smallest ones.

They will keep for a while at 70 -75 degrees ( humidilty will be a major factor) as shriveling will be your first problem. Root cellars are ideal as they maintain humidity and coooler temps. In the older days if no cellar we dug a pit on a sidehill ( for drainage) lined it with straw or pine straw, and covered it with about 15 inches of dirt.
