First time on this forum, and I hope you guys can explain this to me. We have an excellant pecan crop (1 tree) this year. They are bigger, fuller and more plentiful than we've ever had. Only problem is that they leave a little bitter aftertaste. I'm careful to get the llittle inside shell parts out from the creases in the meat, but most times I still get that bad taste. I'm wondering if spreading them out to dry more would help. Please advise.

Are there any discolored spots on the nut meats?
Did you pick them, or had they already dropped to the ground?

Thanks for your response, pollengarden. Yes, some of them have black spots on them, although I don't eat those. We pick them up off the ground. I'll check the link..
