I am pretty sure that those are Black-winged Stilts, Himantopus himantopus. The adults have pink legs and black on the back of the head and neck, so I think that yours are all juveniles.

Yep, Black-winged Stilts. Not sure it's possible to age them, there is a huge amount of individual variation in the amount of black on the head and neck - even some adult males have a pure white head.
