Rhubarb
Matter of opinion. But I would get a named variety, not a generic unnamed rhubarb - some of them tend to bolt. In Montana, you probably want one of the Canadian bred ones with good cold hardiness. Red color is mostly for looks, bi-colored or green ones can taste just as good.
And remember, eat the STEMS ONLY, the leaves can be toxic.
