Oyster Dressing with Crust

New Iberia, LA(Zone 9a)

-French bread
-2 jars of oysters, drained(save juice)
-2 pounds of ground pork
-3 pounds of ground beef
-2 medium onions, chopped
-1 cup of parsley, chopped
-1 green onions (optional)
-Double Pie Crust ( Recipe) follow)
************************************************************1.Soak about six inches of bread in oyster juice.
2. Cook meat and onions in covered pan until grease it gone ( about one hour).
3. Add parsley, oysters and soaked bread.
4. Place in prepared pie crust; top with second crust.
5.Bake at 350 degrees for 45 minutes to one hour.

Double Pie Crust
~~~~~~~~~~~~~~~~
-2 cups of stifted regular flour
- 3/4 cup of shortening
-1 teaspoon on onion salt
- 3/4 cup of cold water

1. Cut flour into shortening; add onion salt and water.
2. Divine into two balls; roll each to fit pie plate. Fit one in bottom of pie plate.

Serve with cranberry sauce.
