Solid Gold Duck

New Iberia, LA(Zone 9a)

-2 wild ducks
-2 cups of wine
-Salt and pepper, to taste
-1 cup of chopped onion
-1/2 cup of chopped bellpepper
-1/2 cup of chopped celery
-1 cup of diced potatoes
-1 box of frozen mustard greens
or
chopped spinach
-2 tablespoons of butter
-bacon slices

1. Marinate ducks over night in wine(wine vinegar and salt may be used instead).
2.Salt and pepper ducks inside and out.
3.Saute onion, bellpepper, celery, potato and mustard greens in butter; stuff cavity of ducks.
4. brush ducks with additional butter and lay bacon slices over breasts; place in heavy pot, breasts up.
5. Bake covered at 300 degrees for two hours, basting every 15 minutes with orange juice; remove cover during the last 15 mintues to brown bacon.
