Doves

New Iberia, LA(Zone 9a)

-1 garlic clove, chopped
-4 stalks of celery, chopped
-5 medium onions, chopped
-4 shallots, chopped
-1/2 bunch of parsley, chopped
-1/2 pound of butter
-Salt, pepper,cayenne pepper
-14 to 16 doves
-7 slices of bacon
-2 large cans of mushrooms with juice
-1 can of consomme
-1 bay leaf
-gravy flour

1. Into a large pot put the chopped garlic, celery, onions, shallots, parsley and butter; skimmer over low heat.
2. Salt and pepper the doves; stuff each with one-half of bacons.
3. Place doves in pot; add mushrooms with juice, connnsoomme and bay leaf.
4. Cover and cook on a low heat one hour and 45 minutes; remove cover and thicken gravy with flour.
5. Serve over rice.
