Fish in Beer Batter

New Iberia, LA(Zone 9a)

-2 pounds of frozen or fresh fillets of trout, flounder,ling or ocean perch.
-1 cup of flour
-1 cup teaspoon of salt
-1 tablespoon of paprika
-1 can of beer
- lemon juice
- oil for deep frying

1. Let fillets thaw, if frozen.
2.Combine flour, salt and paprika in a mixing bowl; gradually add beer, beating until batter is smooth.
3.Sprinkle fillets with lemon juice; dip lightly in addional flour, then draw fillets carefully through beer batter until completttely coated.
4. Drop into hot oil 400 degrees and cook, turning once, about three to four minutes or until cracky brown.
Drain on absorbent towels. Makes four to 6 servings
