Rabbit in Tomato Gravy

New Iberia, LA(Zone 9a)

-1 large rabbit
- oil
-2 onions, chopped
-3 to4 garlic cloves, minced
-1 large can of tomaotes
-1/2 can of tomato paste
-1 parsley and green onions, chopped
-1 can of sliced mushrooms
- salt and pepper to taste

1. Fry rabbit in small amount of oil until brown; remove from pan.
2 Saute onions and garlic with tomatoes and tomato paste; add about a cup of water when the mixture starts to stick.
3. Cook until thick, about an hour and a half.
4.Add rabbit and cook until rabbit is tender; add parsley, green onions and mushrooms. Season to taste.

WE DID EAT THIS SOOOO GOOD! WE WILL HAVE RASIE RABBITS BACK AGAIN NEXT YEAR.
