Stuffed Crabs

New Iberia, LA(Zone 9a)

- 1 cup of chopped onions
- 1/2 cup. of chopped celery
- 1/2 of chopped bellpepper
- 2 garlic cloves
- 1/4 pound of oleo or 1/2 cup of oil
- 1/2 teaspoon of worcetershire sauce
- 1 pound of crabmeat ( 12 crabs)
- salt, black pepper and red pepper, to taste
- 1/2 cup of chopped green onion tops
- 1 tablespoon of chopped parsley
- 2 stale hamburger buns or 6 slices or stale bread
- 1 cup of evaported milk
- 3 eggs
- breadcrumbs

1. Staue onion, celery, bellpepper and garlic in oleo or oil until wilted.
2. Add worcestershire sauce, crabmeat and seasoning, to taste; cook over medium heat about 15 mintues, stirring constantly.
3. Add onion tops, parsley and bread which has been soaked in milk and eggs; mix well.
4. Fill 12 crab shells; top with breadcrumbs.
5. Bake 15 mintues at 375* degrees
