My spinach is starting to bolt...

Too hot now -new plants will bolt too. Those greens likee spinach, mustard, collards, turnipsetc- late summer early fall plantings. Catch your seeds! Chuckl

By the way some folks snap the flower spike back and extend season a hair, but plant gets more bitter when its time to go to seed- to protect the plant while it flowers.

It's bolting because it's a cool weather veggie. Wait to plant in the fall.

I would let at least one plant bolt and save the seeds. Then as everyone said, replant in Sept and enjoy the winter crop. It shakes off frost and is a wonderful edible green in winter.
