Got the tuber from a grocery store it had a tiny bud, barely alive, and took 2 months to get its first leaf, ever since then its doing great!

Congratulations. Some of those tubers get rough treatment and chilling so they don't grow. But there's the odd one that will make it through. Looks like you got one of those. At least you know it's an edible one and not an ornamental.
