Duck Gumbo.... (serves 6 to 8 persons)

New Iberia, LA(Zone 9a)

2-Wild Ducks
4 tbsps. cooking oil
3 onions, chopped
2 bell peppers and 1 hot pepper,chopped
4 small bay leaves
2 tbsps.file
1 bunch green onion tops, chopped
1/2 cup parsley, chopped
Cut the ducks in pieces and season with poultry seasoning,salt and pepper. Brown in oil.
(Pour excess oil off, but be sure at least 1/2 cup left.)
Add onions and file and saute until onions are wilted. Add 2 to 3 quarts of hot water. Add salt, pepper, bay leaves and thyme. Let cook covered until meat begins to get tender, on low heat.
After duck is tender, add bell pepper, onion toppps and parsley. Let simmer about 5 minutes, turn off fire and let sit for about one-half hour.. ( When you add the onion tops, you can add cooked sausage or raw oysters, if desired.) Enjoy it!!!
