Cabbage for Sauerkraut?

I'm looking for gardeners who grow their own cabbage for kraut making - anyone out there? What variety do you grow?

We don't make kraut our-self, but we grow lots for other people. One guy ordered 250 heads this year. We have over 500 on order.
We grow mostly Bravo from Harris seeds.
I don't know if that would do good in Texas.

I make kraut and just buy the plants of whatever variety from the big box stores or a nursery. Never noticed one variety better than any others for it. It tends to do better in the fall for me, although I do still have some heads in the garden even now that I haven't had time to harvest.

Thanks Country Gardens! Dr. Jerry Parsons (Texas A&M) does recommend Bravo cabbage for Texas gardens! I'll give 'em a try this fall and next spring.

And thanks jlkapps for commenting. I'm not sure myself what makes a good kraut cabbage; I'm assuming it has something to do with the cabbage's (storage) ability to hold up during the curing process without turning "mushy". How do you make your kraut? I purchased one of those fermenting crocks that have the weight stones and lid with a water sealing trough.

All I know is good homemade kraut and sausage is mighty good eats!

I've used 2 different recipes and put it in canning jars. It ferments over a couple of months and tastes good! No need to pressure can it or go through the crock fermentation that way. Has a much better texture and flavor than store bought. One of our favorite meals is grilled brauts from a local butcher, homemade kraut and mashed taters. Yummy!!
