So now I have about 15-20 pounds of almost ripe fruit. Any ideas what I can do with it? Leather? Dry it?

I have several sitting with a banana to see if the ethylene of the banana that will ripen them up. They are about four days from perfect.

I'm SO mad at myself. I should have culled a LOT more!

I don't know if gassing works on pit fruits - give it a try but I would eventually lay them out flat not quite touching. By any chance do you have egg cartons? Then sort daily to take the ripest ones and discard any that skip from under-ripe to spoiled.
