Sausage, Onion and Apple Bake FOR GROUPS

Nanaimo, BC(Zone 8b)

Sausage onion and apple bake
16 servings 40 servings
Sausage meat 4lbs 10 lbs
Onions chopped 2lbs 5 lbs
Apples,cooking 3 lbs 71/2 lbs
Brown Sugar 1cup 21/2 cups
Nutmeg 2tsp. 2 tbsp.
Blended Juice 1/4 cup 2/3 cup

Put Onions into a saucepan and cover with boiling water.
Boil for 5 min. and drain.
Make 21/2 inch in diameter patties, or pre-portioned 4 oz. patties may be used. in this case allow 1 pattie per serv.
Brown lightly on both sides in a frying pan.
Wash,peel and cut Apples in thin slices.
Mix Brown sugar with Nutmeg.
Combine apple slices with onions and put 2/3 of this mixture in casserole or large baking pan with tight fitting lid.Sprinkle 1/2 sugar nutmeg over and then patties.Put remaining onion apple mixture on patties and then remaining sugar mixture. Sprinkle Juice over this.
Cover pan and place in oven at 350 for 25 min when apples should be tender.
Can be made in individual casserole dishes as well.
