Ranchy Breaded Chicken

I read a version of this on allrecipes.com tonight and modified it somewhat.

    Preparation:

  • Pre-heat oven to 350-degrees
  • Spray a cookie sheet with non-stick cooking spray. For faster cleanup, line sheet with aluminum foil first.
  • In a shallow dish, make a mixture of bread crumbs and your favorite spices. To about 1 cup bread crumbs, I added a teaspoon each of dried oregano and thyme and roughly 1/2 teaspoon of garlic salt. Just use whatever you like. Lemon pepper Mrs. Dash would be good, too.
  • In another dish, put about 2 cups of salad dressing.*

* Their recipe said to use Italian dressing, but I used a 3-cheese ranch dressing. Experiment with what you like.

Pat dry several boneless, skinless chicken breasts. Dredge the chicken pieces in the salad dressing, coating them very well. Then dip both sides in the breadcrumbs to coat them well with the breading.

Place breaded chicken pieces on the cookie sheet and lightly spray the tops of chicken pieces with the cooking spray to aid in browning. Bake for about 30-35 minutes at 350-degrees, or until juice runs clear. Let stand a couple of minutes after removing them from oven.

I served these over a Spanish-style rice to which I'd added garlic powder, pepper, oregano and canned corn. DH heartily approved and there are no leftovers. :o)
