Something is eating my amaranthus leaves and I don't know what. Can someone please help identify and advise me on what to use.

It looks to be caterpillar damage OR slug damage - get some Sluggo and put it in a plastic cup. Turn the cup on its side and lay it under the plant - SOME critter should be in the cup - dead- in the morning.
